Carol’s Healthy Banana Pecan Muffins

Image 2My oldest and bestests friend Carol Spry Vanover, often reconstructs recipes to make them healthier. Here’s a super example of yum and health all melded into one delish muffin! For Emily, who misplaced the recipe and wanted to make it again.

Carol’s Healthy Banana Pecan Muffins

Ingredients

3 large ripe bananas

¾ cup Splenda

1 egg, slightly beaten

1 tsp. baking powder

1 tsp. baking soda

½ tsp. salt

1 tsp. vanilla extract

1 ½ cups white whole wheat flour

5 tbl. Smart Balance, melted

¾ cup chopped pecans

(1) 6 oz. cup yogurt, any type, any flavor*

Instructions

Mash the bananas. Add the Splenda, the slightly beaten egg, the melted Smart Balance, the vanilla and yogurt.  Stir well to mix.  Add the dry ingredients, and stir well to mix again.  Fold in the pecans last. 

Pour into sprayed muffin tin, or use paper cups.  Bake at 3750 for 20 min.  Insert toothpick in center to check for complete baking.

*Light Greek yogurt, vanilla flavor, makes a tasty muffin with a wonderful  texture; however flavored    yogurt of any type works well, too.
