Hobo Dinners with Laura’s Lean Beef

I developed recipes a while back for Laura’s Lean Beef and this campfire dinner in a packet is one of the most popular. Thanks to Laura’s Lean Beef team for the photo above.

CAMPFIRE HOBO DINNERS IN A PACKET

Ingredients: Burgers

1-1/2 pounds lean ground beef (I used Laura’s 92% lean)

2 tablespoons olive oil

1-2 tablespoons powdered ranch salad dressing or dried Italian salad dressing

2 teaspoons Canadian steak seasoning

Handful fresh parsley, minced

6 thick slices favorite cheese

Ingredients: Vegetables

6 small potatoes, peeled and sliced thin or cubed

12 – 16 oz. mushrooms, sliced (optional but good)

6 thick slices red or sweet onion

2-3 teaspoons Canadian steak seasoning

Olive oil

Instructions: Burgers

Place beef in large bowl. With a potato masher or wooden spoon, gently break up meat. 

Add olive oil and mix gently. 

Add dressing of choice, steak seasoning and garlic. Mix gently and divide into 6 patties. 

Poke a hole in the center of each patty. This helps prevent them from humping up in the middle during grilling.

Set aside while preparing vegetables.

Instructions: Vegetables

In a large bowl, mix potatoes and mushrooms together. 

Sprinkle steak seasoning on, and mix to coat.

Pour in enough olive oil to coat. 

Keep onions separate. No need to season them.

Assemble packets

Each dinner requires 2 sheets of foil, 12”x18’’. Spray foil with nonstick spray.

Assemble as follows:

Place 1 onion slice on each foil packet.

Divide vegetable mushroom mixture evenly between packets.

Place hamburger on top of vegetable mushroom mixture.

Seal packets tightly. 

Brush grill with olive oil. 

Preheat to medium, 350 degrees. 

Place packets on grill, and grill until burgers are done and vegetable mixture is tender, 30-40 minutes. 

Open packets carefully, place cheese slices on top, and seal again for a few minutes until cheese melts.  

Yield: 6 dinners
