Cole slaw like KFC

Cole slaw like KFC

This slaw has more of a shred than a chop, but the results are pretty close to KFC’s. For Marlene B., who said: “My husband loves KFC cold slaw. You had it in the paper. I cut it out so I could make it and somebody in the house threw it out. I searched your website but could not find it. Could you pass it on to me?”

Well, sure. Now go to taste on this recipe, which is a combination of suggestions from readers and students. It’s been tweaked as the recipe continues to get shared. The original one came from Todd Wilbur.

Now the actual ingredients may be a bit different than what KFC uses, but remember, they make theirs in huge amounts, and the recipe I’m sharing is for the home cook.

KFC Cole Slaw Recipe Clone

Salad

6-8 cups cole slaw mix (cabbage and carrots) OR

6-8 cups shredded or finely chopped cabbage and 1/4 cup shredded carrots

2 tablespoons onion, minced real fine

Dressing

1/4 cup milk

1/2 cup mayonnaise (real mayo)

1/4 cup buttermilk (regular or low-fat – I use regular)

1/3 cup sugar

2-3 tablespoons vinegar, either clear or cider or to taste

Good squeeze of lemon juice to taste

Salt and pepper to taste

Mix salad ingredients together. Whisk dressing ingredients together and pour over salad. Tastes best when allowed to sit in frig several hours. Stir before eating to recoat the salad with dressing.
