Ravioli and Tater Tot Casseroles to Tote

I love chatting with Matt Swaim each Thursday morning on the Sonrise Morning Show/Sacred Heart Radio to talk about Bible foods & herbs.

Today, we concentrated on easy casseroles to tote to someone under the weather. Or a family with a new born. Or folks who just need a friendly “hello”. So many instances where the Works of Mercy can be employed!

These recipes are not fancy and are “speed scratch” – using prepared ingredients. The ravioli tastes like lasagna but is super easy; and the tater tot with beef – who doesn’t love potatoes and meat in a creamy sauce?

ITALIAN SAUSAGE AND RAVIOLI CASSEROLE

Ingredients

1 pound bulk Italian sausage, mild or hot

1 small onion, chopped

2 teaspoons/2 cloves garlic, minced

1 large jar favorite pasta sauce (I like plain Marinara)

1 bag frozen cheese filled ravioli – about 24 oz or so

3-4 cups Italian cheese blend or Mozzarella or favorite cheese

Instructions

Preheat oven to 350.

Cook sausage, onion and garlic in skillet until sausage is done. Stir in pasta

Spray a 9×13 pan. Spread half the sausage mixture into bottom. Add half of the ravioli on top, then sprinkle with half Italian cheese. Top with remaining ravioli, sausage mixture and rest of cheese.

Cover with foil and bake 45 to 50 minutes or until thoroughly heated. Remove foil and bake until cheese is melted.  Let rest 10 minutes before serving. 

TATER TOT CASSEROLE

Ingredients 

Olive oil, enough to film bottom of skillet
1 small onion
1 pound lean ground beef or ground turkey or chicken
2 cloves/2 teaspoons garlic or 1 teaspoon garlic salt
1/2 cup sour cream 

1 can condensed cream of chicken soup 

8 oz. shredded sharp cheddar cheese
1/2 – 3/4 cup milk

Salt and pepper to taste
1 large bag frozen tater tots 

Instructions 

Preheat oven to 350 and spray 9″ x 13″ casserole.
Cook onions and beef until beef is done. Stir in everything but tater tots into a large bowl and mix.

Taste for salt and pepper.

Pour into casserole.

Top with tater tots. 

Bake approximately 45 minutes or until tots are golden brown. 

Tip

To get extra crispy tater tots, broil casserole for the last five minutes.
