Friendship Soups in a Jar

I was chatting with Ron Wilson yesterday and shared a recipe from neighbor, Erin Phillips of Phillips Farm, for her pasta fagioli soup in a jar recipe. Well after the show I got several requests for that recipe, including Rose B.,  plus one I have shared before: Friendship soup in a jar. So both of these are shared here. These make wonderful, pantry stable gifts from the kitchen.

PASTA FAGIOLI SOUP IN A JAR

This is the soup Erin brought over to husband, Frank, during a bout of illness. Oh my, was it tummy warming good and good for body and soul!

 

1 Quart Mason Jar (wide mouth is best but regular jar will work)

Add the following in order listed – all ingredients are dried

Ingredients

1 cup small pasta shells in bottom

3/4 cup red beans

3/4 cup great northern beans

Combine these dried spices in small bag and place on top:

3 tablespoons parsley

1 teaspoon oregano

1 teaspoon basil

1 teaspoon minced onion

1/4 teaspoon garlic powder

1/4 teaspoon onion salt (opt)

1/4 teaspoon red pepper flakes

1 bay leaf

Additional ingredients:

1 can diced tomatoes, salt and pepper to taste, Parmesan cheese if you like

To prepare:

Separate seasoning packet, beans and pasta.
Rinse beans and add them with 6 cups water to pot. Boil 2 minutes. Remove from heat, cover and let stand for 1 hour. Drain and return beans to pot.

Add seasoning packet, plus 8 cups water (or combo of broth and water or all broth), bring to boil, reduce heat, cover and simmer for 1 hour or until beans are tender.

Add tomatoes, salt and pepper if you like, cover and simmer 30 minutes, strring occasionally.

Stir in pasta, cover and simmer 10 minutes or until pasta is tender. Remove bay leaf and top with cheese. Makes 14 servings.

SHAKER FRIENDSHIP SOUP IN A JAR

You asked for it – one of my most requested gifts. Fun for a family project.

Ingredients

Layer soup mix in quart jar in order given:

1/2 cup dried split peas

1/3 cup beef bouillon granules

1/4 cup pearl barley – I like quick cooking

1/2 cup lentils

1/4 cup dried minced onion

2 teaspoons Italian seasoning mixed with 1 teaspoon garlic salt and 1 teaspoon pepper

1/2 cup rice, either brown or white

Put in plastic baggie or make pouch of:

1/2 cup little pasta

Recipe (tie to jar)

Soup mix

1-1/2 pounds lean ground beef – I like sirloin

1 quart water or more if needed

5-6 cups low sodium, fat free beef broth plus more if needed

28 oz. diced tomatoes

Garnish: Shredded cheese

Instructions

Set pasta pouch aside. Film bottom of pot with olive oil and brown beef.  Add water, broth, tomatoes and soup mix.  Bring to a boil. Reduce heat; cover and simmer about 30 minutes. Add pasta, cover and simmer 20 minutes or until pasta, peas, lentils and barley are tender. Adjust seasonings. Serves 8-10.

Easy decorating tip for top of jars

Put a cupcake liner (or decorative napkin cut a bit larger than top) on top of jar before sealing or tie with string or ribbon.
