THE BIBLE DIET: FOODS IN THE BIBLE MENTIONED AND/OR EATEN BY JESUS
Some call it “eating from the Garden of Eden”; others call it the “Bible diet”. Regardless, eating healthy, wholesome, natural food is our goal. And Jesus made it easy to choose by mentioning and/or eating these foods during the course of His life. Four of these, olive oil, butter, garlic and chicken are included in the recipe below.
Salt and pepper
Several sprigs fresh thyme or 1 teaspoon dried thyme leaves
1 lemon, quartered
Several pieces of garlic, peeled and smashed
Optional veggies to scatter around chicken
1 large onion, thickly sliced
Carrots cut into large chunks
Preheat oven to 425 degrees. Remove giblets. Rinse chicken and dry very well. Salt and pepper inside of chicken – don’t be shy with seasonings.
Push thyme, lemon and garlic into cavity. Brush outside all over with butter and sprinkle liberally with salt and pepper. Tie legs together.
Put in sprayed roasting pan just large enough to hold the chicken along with the veggies. Drizzle a little olive oil over the veggies.
Roast for 1-1/2 hours or until juices run clear when you cut between a leg and a thigh. (Depending upon how cold the chicken was when you put it in the oven the timing can be a little more). Internal temperature there should read 165-170 or a bit more. Remove from oven, tent with foil and let rest 20 minutes to redistribute juices before carving.
