Mallows and wild orach, sometimes called mountain spinach since it can grow wild are the forerunners of our spinach.

Cool weather, either spring or fall. You can get several cuttings from one planting, and spinach grows great in containers.
We know that when Popeye ate spinach, he became strong. What are the nutritional benefits of spinach?
Spinach is a rich source of a B vitamin that is necessary for tissue growth and repair. Spinach contains both iron and vitamin C. This is important because the iron found in plants isn’t as readily absorbed by the body as the iron found in meats, unless it’s accompanied in the same meal by vitamin C. Since spinach has both iron and vitamin C, that’s good news.
What about using the microwave to cook spinach?
I think that’s an excellent way – it’s so quick with little loss of nutrients.
SPINACH SALAD WITH CITRUS AND RED WINE VINIAGRETTE
2 bags (6 ounces each) prewashed baby spinach
4 oranges, peeled, cut into segments
½ cup dried cranberries
½ red onion, very thinly sliced
½ cup toasted almonds (optional)
1/3 cup olive oil
3 tbsp red wine vinegar
1 tsp Dijon mustard
Salt and pepper
Place spinach, oranges, cranberries, onions, and almonds in large bowl. Whisk together oil, vinegar, mustard, salt, and pepper. Toss with salad right before serving.
