 Spicy Snack Mix with Pepitas


From Santa Fe, New Mexico.  Pepitas are pumpkin seeds and especially good for the prostate. Makes a yummy gift from the kitchen.

1/4 cup Extra Virgin olive oil

1 teaspoon cumin

1 teaspoon chili powder

1/4 cup sugar

2 tablespoons honey

2 cups raw pumpkin seeds


Heat oil in large skillet.  Add cumin and chili powder. Cook over medium heat 30 seconds, stirring constantly. Add sugar and honey, and stir until sugar dissolves. Stir in seeds and cook over low to medium heat just until seeds are toasted – be careful – it takes about 6-8 minutes or so. Stir constantly so seeds don’t burn. Mixture will smell very aromatic when done. Pour onto sprayed sheet. Cool & break apart.

Bonus Recipe:



Rinse the seeds, and pat dry with paper towels. Toss with a  small amount of olive or canola oil and some Kosher salt. If you want a little heat, sprinkle on some ground cayenne pepper. Place in a single layer on a sprayed cookie sheet. Bake at 350 about 20 minutes or until toasted, stirring a couple of times during baking time.
