Today really was a simple country pleasures kind of day. Son Shane brought his 3 girls over and I took the 2 oldest ones, Eva, 7 and Emerson, almost 3, down to the East Fork river. The girls caught crawdads, tiny fish and scooped up lots of shells and other treasures from the shallow water. I didn’t realize so much time had passed by until Shane came walking down with baby Ellery in his arms. “Time for Emerson’s nap”, he said. So we went back to the house and even though Shane didn’t stay for lunch I did have all the makings ready for this simple pizza. I was also going to photograph the girls making the pizza for this blog. But since that didn’t happen, I’ll share a photo of the reason why: 2 little girls enjoying, as I said, “simple country pleasures.”
The little ones will love making this. Good even with just sauce and cheese.
1 can flaky biscuits, 10 oz.
Optional toppings: Pepperoni, Chopped bell peppers, Mushrooms, Onions, etc.
Preheat oven to 400. Separate dough into 10 biscuits. Place 1 biscuit in center of cookie sheet lined with foil and sprayed. Arrange remaining biscuits in circle, edges slightly overlapping, around center biscuit. Gently press with your had into a 10” circle. This makes your sunflower. Spread a thin layer of sauce on top. Sprinkle with your choice of toppings. End with topping of mozzarella. Bake 12-15 minutes. To serve, pull apart.
