Perfect Brunch Casserole

My latest favorite brunch casserole. Feel free to sub any meat for the sausage, or leave it out. You can also add a layer of spinach – steam or sauté in a teeny bit of olive oil first.

Brunch egg casserole with sausage, potatoes and cheese

Yum! Sauté sausage ahead of time and bring to room temperature before continuing.

1 pound hot pork sausage or your favorite, cooked

3 cups frozen hash browns, thawed completely

12 oz. shredded cheddar

12 large eggs, lightly beaten

2 cups 2% milk or whatever you have

Salt and pepper

Preheat oven to 350. Place hash browns in sprayed 9×13 pan. Top with sausage and cheese. Whisk eggs milk and seasonings and pour on top. Bake 50-60 minutes until somewhat puffed and golden. Toothpick inserted in center should come out clean.
