No Bake 5 Ingredient Gluten Free Granola Bars with Dates and Almonds

Gluten Free Granola Bars with Almonds and Dates

SO YUMMY, SO EASY GLUTEN FREE GRANOLA BARS

Today, like every Thursday, I chatted with Anna Mitchell on the Sonrise Morning Show, Sacred Heart Radio. Dates were on the agenda. This ancient, fiber filled food was eaten 4000 years before Christ was born. Date palm trees can live up to 100 years!

Dates have good B vitamins and iron, so they’re a nutritious fruit. Right now through September fresh dates are in season.

This recipe uses dried dates and is not only easy, but, as the title states, yummy

These keep covered at room temperature about a week, or frozen for a couple of months. Great for an after school snack or to tuck into a lunch box.

1 cup dates, processed in food processor until they form a sticky ball

1/4 cup maple syrup, honey or agave syrup

1/4 cup creamy peanut butter

1 cup nuts – I like almonds

1-1/2 cups oats

Toast oats and nuts separately in 350 degree oven until oats are just golden and nuts are fragrant. Chop nuts coarsely. Put oats, nuts and dates in a bowl. Warm maple syrup and peanut butter, mix well and stir this over oats, breaking up dates to thoroughly mix. This will take a few minutes. Pour into 8×8 pan lined with sprayed foil. Press down firmly. Cover with wrap and place in refrigerator to harden. Remove and cut into bars.
