I thought I’d remember the name of the young mom who wanted to make this but the only thing I can remember is how nicely she asked if I had a recipe for Nieman Marcus’ Margarita pie. “I had it at a party and the hostess wouldn’t part with the recipe, only to tell me the pie came from Neiman Marcus,” she said.

The note in my file tells me I enjoyed this pie at a Neiman Marcus event way back when. Nothing easier or more refreshing for a hot summer day’s dessert. This makes 2 pies. A nice dessert for that Labor Day picnic.


2-1/2 cups pretzels (1 pound bag), crushed in food processor

1/2 cup sugar

8 ounces butter or margarine, melted

Stir crushed pretzels and sugar into butter. Divide between two 9-inch pie pans and, press mixture firmly onto bottoms and sides of pans. Freeze 1 hour.


Combine, whip until thick and pile into 2 crusts:

3 quarts vanilla ice cream, slightly thawed

6 ounce frozen limeade concentrate, thawed

1/4 cup Tequila Gold liqueur

2 tablespoons orange liqueur

2 limes, grated and juiced

Freeze until firm, 4 hours or so.


1 lime, sliced thin for garnish

Mint for garnish

Tip from Rita’s kitchen

Swap orange liqueur with orange juice if you want.
