Loaded/Twice Baked Potato Casserole “Side Dish” of the Year

My friend, Carolyn Grieme, a N Ky reader, served this at her home when she entertained us and other friends. (Carolyn found it online).  It was so good and I think this potato casserole would be a perfect side to a holiday meal. I adapted it only slightly. This recipe is all over social media right now!

 

Loaded Baked Potato Casserole

 

Ingredients

 

4 pounds russet potatoes, peeled and cut into chunks

 

4 cloves garlic, mashed flat

 

6 tablespoons butter

 

1 cup sour cream

 

1/2 to 1 cup whipping cream or half & half or milk

 

8 oz. shredded cheddar cheese

 

1 pound bacon, cooked and crumbled

 

Salt and pepper to taste

 

Instructions

 

Put potatoes and garlic in pot. Cover with water, bring to a boil, cover and cook until potatoes are tender, about 15-20 minutes.

 

Preheat oven to 350. Mash potatoes to desired consistency. Mash in butter, sour cream and whipping cream. Season with salt and pepper. Stir in 1-1/2 cups cheese and most of the bacon, reserving a little for the top.

 

Pour into sprayed 13×9 baking dish. Sprinkle with rest of cheese and bacon.
Bake about 25 minutes or until hot and cheese is melted.

    Can this recipe be made a day ahead, and baked before serving? Thank you.

      Yes. I would let it sit out about an hour and then tent it with foil. Bake 350 until hot throughout. To test stick a butter knife in center. If it’s hot you’re good to go.

    I HAVE SEARCHED IN VAIN FOR YEARS FOR DUPLICATION OF AN OLD FAMILY FAVORITE BOXED L LENTIL PILAF DISH. MADE BY THE NEAR EAST COMPANY. THE ENTIRE HOUSE WOULD SMELL OF THIS RECIPE.       Are you referring to the boxed lentil pilaf made by Near East? I believe they still make it and it’s available at the grocery I think. Let me know and I’ll research it for you.
