Latest and Greatest Backpack Granola


DSCN9108Today I chatted with Matt Swaim on the Sonrise Morning Show, Sacred Heart Radio about the Right to Life Marches going on all across the US. I wanted to share this recipe adapted slightly from Alton Brown’s for an easy to tote, yummy granola.  

 

MY LATEST FAVE FOR
BACKPACK GRANOLA 

 The almonds, oil and fruit used in this recipe are all Biblical specimens and were eaten during Bible times.

3 cups old fashioned oats

1 cup slivered or sliced almonds

1 cup cashews, pecan halves or favorite nut

3/4 cup shredded coconut, unsweetened or sweetened

1/3 cup plus 1 tablespoon light brown sugar

1/3 cup plus 1 tablespoon pure maple syrup

1/4 cup vegetable oil – I used grape seed

1-1/4 cups golden raisins or chopped apricots or your favorite dried fruit

Preheat oven to 275.

Combine the oats, nuts, coconut, and brown sugar.

In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour into a single layer onto sprayed cookie sheet with sides. Bake 1 hour or so, stirring every 15 minutes. Remove from oven, cool a bit and stir in fruit.
