Happy New Year and Roasted Garlic Bread w/Gorgonzola Dip

Here’s a nice appetizer for that New Years party – not difficult but oh so good!

Roasted Garlic Bread with a Gorgonzola Dip

For garlic oil:

1 large head garlic

½ cup olive oil


Cut off top of head of garlic to expose garlic cloves.  Drizzle with the olive oil.  Wrap in foil and bake in a 375 oven for 35-40 minutes or until the cloves are tender when you insert a knife.  Set aside to cool.


For the gorgonzola dip:


1 cup heavy cream

1 cup gorgonzola crumbled (about 4 ounces)

1 small baguette



Preheat oven to 400º.


Slice the baguette in half horizontally. Place the baguette halves on a foil lined cookie sheet.  Take the roasted garlic and place the cloves into a mini food processor.  Pulse until the cloves are smooth.  Slowly drizzle in the olive oil until you get a somewhat smooth mixture.  Spread on the baguette halves.  Toast in a 400 oven for 8-10 minutes until lightly golden.  Cut into 1 inch slices.


In a saucepan boil the cream, stirring occasionally until reduced by half or to ½ cup.  Add crumbled gorgonzola and cook over low heat, until the cheese has melted and the sauce is smooth.


Pour sauce into a bowl and arrange garlic bread slices around the bowl.  Dip bread in gorgonzola dip.
