Crispy Baked Fish new fave

Well, supper started out as a bowl of soup with my newest crispy fish sandwich, but the only bread I had was one piece of whole grain and Frank’s soft, white,  bread that hardly holds jelly, let alone a fat wedge of mahi mahi. Anyway, the sandwich supper turned into a full plated one. Here’s a photo and the fish was awesome. Perfectly crisp, but not greasy since it was baked, not fried.

CRISPY BAKED FISH

About 2-3 pounds white fish filets

1 cup milk

2 cups Panko bread crumbs

1/3 cup Parmesan  cheese

1/2 teaspoon ea: dried oregano, basil, thyme, paprika

Several dashes cayenne pepper

Salt to taste

1/2 stick melted butter or substitute

Preheat oven to 400. Pour milk in bowl. Mix crumbs with cheese and herbs and spread in shallow plate. Dip each filet in milk, then dredge in crumbs. Put on sprayed baking sheet and drizzle with butter. (You can also spray with Pam for less fat and nice browning.).  Bake 15-20 minutes or until light gold and flaky. Serve with tartar sauce.

    the secret to a good crust is to make sure that your oven is very huatdmfier putting in the dough, I would use a spritzer to spray water into the hot oven before closing the oven door.putting a small baking tin of water in with the bread would also work
