Countdown to Thanksgiving: Cranberry Celebration Salad & Dried Cranberry Sauce w Apples

CRANBERRY CELEBRATION SALAD LIKE KROGER

 

This is one of those recipes in my Recipe Hall of Fame. Each year I get requests for this very popular salad from the Kroger deli. Here they are once again.

Marilyn Hoskin’s cranberry celebration salad

Marilyn, a Milford reader, developed this from an Ocean Spray recipe and by reading the ingredients on the Kroger salad. Try substituting cherry jello if you like. Good work!

Ingredients

15 oz crushed pineapple, drained – save juice

1/2 cup cranberry juice

2 tablespoons lemon juice

1 pkg, 3 oz, raspberry jello

15 oz can whole cranberry sauce

1/2 cup chopped walnuts

Instructions

Boil pineapple, cranberry and lemon juice together. Add jello. Remove from heat and stir in cranberries. Put in fridge till almost set. Add pineapple and nuts. Add a half cup of chopped celery if you like.

ED STEGNEY’S CRANBERRY SALAD

Ed gave me these substitutions for his version. Sounds yummy!
Use an 8 oz can of crushed pineapple
3/4 cup orange juice instead of cranberry juice cocktail (mostly water and sugar)
At the end fold in 1/2 cup diced celery, 1/2 cup peeled diced apple and 1/4 cup chopped toasted walnuts.
Spray a 4 cup mold with cooking spray, add the mixture, chill overnight and unmold.

Even non-Jello fans love it. THe orange juice, apples, celery and walnuts are a 100% inprovement.

One year I found cranberry Jello and used it

Can also be made in an 8-inch square pan

 

QUICK DRIED CRANBERRY SAUCE WITH APPLES AND CINNAMON

Talk about a new twist on an old favorite! This recipe uses dried cranberries, which makes it versatile enough to make any time.

Ingredients

2 cups cranberry juice with no added sugar, divided into 1-3/4 cups and 1/4 cup

12 oz. sweetened dried cranberries

1 cinnamon stick, broken in half or 1/2 teaspoon or so cinnamon

1/2 cup sugar

2 apples, peeled or not, diced very small

2 teaspoons corn starch

Instructions

In a saucepan over medium heat, cook 1-3/4 cups cranberry juice, cranberries, cinnamon and sugar. Bring to a boil and let cook for 5 minutes.

Add the apples and cook, stirring occasionally, until the cranberries have softened and apples are tender, about 5 minutes.

Whisk the cornstarch into 1/4 cup cranberry juice.

Stir this into the cranberry mixture. Cook a couple minutes more.

Refrigerate until thickened, about 30 minutes or up to 3 days. Remove the cinnamon stick and serve. Makes a good 3 cups.
