Fresh picked green beans from my garden
Having trouble digesting beans? Add a bit of savory to bean dishes. Savory is called “the bean herb” in Germany and yes, it does help digest beans, especially beans like kidney beans, great northern beans, etc. Here’s a much requested recipe that’s been a favorite in my family for 3 generations. Mom used to cook this on top of the stove in a big iron kettle.
CROCKPOT COTTAGE HAM, GREEN BEANS AND POTATOES
Spray crockpot. Make a generous layer of peeled potatoes, quartered. Add 1 pound green beans. Quarter an onion and add. Put cottage ham on top and add a couple cups of water. Cook on low 7-10 hours or high 4-5. Season with salt and pepper and serve.
Cottage ham is sometimes called cottage butt, meaning it’s from the butt/bottom portion of the shoulder. It is smoked but not cooked.
Fresh green beans are very low in calories and contain no saturated fat but are very good source of vitamins, minerals. They have lots of good fiber, and are great sources of vitamin A, also vitamin C. There’s a nutrient in green beans, too, that is good for your eyes. They also contain potassium which is good for your heart, muscles and blood pressure.
