Clone of famous Kentucky pie perfect Derby Day dessert

Rita’s clone of Kentucky Derby pie

Authentic Kentucky Derby pie is a closely guarded secret and even the name is copyrighted. Probably my most requested recipe this time of year. I’ve changed the recipe up a bit and here it is.

Start with an unbaked pie crust

3 large eggs, room temperature

3/4 cup sugar

1 cup dark corn syrup

1/2 stick butter, melted and cooled

1-1/2 teaspoons vanilla

Up to 1-1/4 cups chopped pecans

1/2 cup chocolate chips

Splash of Bourbon whiskey (optional but good)

Preheat oven to 350. Beat eggs and then beat in sugar, corn syrup, butter and vanilla.  Stir in bourbon, nuts and chocolate.  Bake about 40- 55 minutes or until filling is puffed and crust is golden.  Cool and serve with whipped cream.  Store in refrigerator.

    I don’t have one of my clones, but there are good ones out there.

    BTW we got back from vacation and I know I’m way behind in addressing comments. I’ll get to all of the comments hopefully by the end of this week.

    And with school starting, I’ll keep all of my readers, especially those with kids in school or going to school themselves, in my daily prayers.
