Lots of us will be celebrating Valentine’s Day by giving our loved ones something chocolate. Did you know, though, that there really was a St. Valentine? He lived in Rome and we believe he was arrested and then killed for the simple act of performing marriage for Christians. The reason? In those days members of the early Christian church and others may have been forbidden to marry.
This Valentine’s Day I have a really special, trendy treat for you to make: Brookies! Let the little ones roll out the cookie dough and you have a fun family project going on for this meaningful day.
What’s a brookie? A combo of a cookie and brownie. The brookie has a brownie base with a cookie top!
1 box brownie mix, mixed according to directions for cake-like brownies- I used milk chocolate but use your favorite
1 pack refrigerated chocolate chip cookie dough – enough to make 12 brookies
Muffin tin – 12 cup – lined with paper liners
To make cupcake shaped brookies:
Preheat oven to 350. Pour batter 2/3 of the way up into muffin tins which are lined with paper liners. This is important; otherwise they stick terribly, whether your recipe is from a box mix or from scratch.
Roll a scant tablespoon of cookie dough into a ball, then flatten out and smoosh it down just a tiny bit on top of the batter. Bake for about 25 minutes or so. A toothpick inserted in the center should come out pretty clean.
To bake in pan like brownies:
Follow directions on brownie box and lay flattened cookie dough in rows on top. Bake 25-30 minutes or until toothpick inserted in center comes out pretty clean.
Can you use a brownie mix and cookie mix from scratch? Of course!
