Can you help? Braciole made with round steak

Kenny Ann R., a Suburban Press reader, is still looking for a recipe made with round steak and not flank. She said: “Bread crumbs were used, maybe onions and spices. I believe it was round steak, I know it was not flank steak. I think the recipe called for using string when you roll it up. I cooked it in (I think) a jar of spaghetti sauce for a long time. If it wasn’t a jar of sauce, I know it was very simple.”

    Hi, Rita…..saw Kenny Ann R. (I think it might be another friend of mine Kenny Ann Robers) and her search for a Braciole recipe made with round steak. There are some out there but most Italian recipes say to make with flank steak. Cooks.com has a recipe for Braciole made with round steak:
    1 lb. slice of round steak
    1 C bread crumbs
    1/4 C Romano cheese
    1/4 C finely chopped celery
    1/2 finely chopped onion
    2 chopped hard boiled eggs
    Salt & Pepper to taste
    Parsley, optional

    Salt and pepper the steak. Mix the crumbs, cheese, celery, onion and diced eggs. Spread on the steak, roll and tie with string. Brown on all sides and add to your favorite spaghetti sauce and simmer for 40 minutes or until meat is tender.

    Rachel Ray has a great recipt for Braciole. I’ve made it twice, great chilled for lunch. On Internet. Google “Braciolr”.
