Russian Kale is Tender and Yummy in Salad

Image - Version 2I love any kind of kale, but Russian is my favorite. It’s tender and like all kales, chock full of vitamins and minerals. An anti-cancer green as well!  Here’s my latest have shared by a reader.


Ingredients Salad

Combine and set aside:

4 cups very finely chopped kale

Palmful chopped toasted almonds

1 apple, diced

Sharp cheddar cheese, diced, about 1/2 cup

Ingredients Dressing

Whisk together

2 tablespoons fresh lemon juice

Salt to taste

1 very small garlic clove, puréed

5 tablespoons extra virgin olive oil


Freshly grated Parmesan


Toss salad with dressing. Give it a shower of Parmesan.


Best made 15  minutes or so before you serve it. This lets the kale soften.
