Best way to wedge a lemon: Genius!

No waste lemon wedges

I learned this from my sous chef, Kay Hitzler, while we were prepping for a cooking class. Cut off both ends of a lemon. Stand it upright and then following the membranes that separate the wedges, cut between them. Cool, huh?
